Poi / Basella (Malabar Spinach) is a fast-growing, leafy green vine commonly found in tropical regions. It is known by several names such as Malabar Spinach, Ceylon Spinach, and Bachhali. There are two popular varieties: Green Stem Basella and Red Stem Basella. Both have thick, fleshy, slightly mucilaginous (smooth and slippery) leaves, but the red variety has attractive purple-red stems and veins, which also add color to dishes.
This leafy vegetable is widely used in Indian, Southeast Asian, and African cuisines. It has a mild flavor, which becomes soft and silky when cooked. Poi is ideal for curries, dals, saag preparations, stir-fries, soups, and sometimes even used in kombu-style dishes. It pairs well with spices, moong dal, and coconut-based recipes.
